How To Make A Mean Chicken Pesto Sandwich

My boyfriend and I love chicken pesto sandwiches.  We make ours with homemade pesto with basil from our garden.  It's so fresh tasting. Below is how we make ours.

Doesn't it look amazing?!  Well, it tastes as good as it looks. Here's how:

Sandwich
Ingredients:
1 loaf of bread (with a softer crust)
1 tomato (sliced)
1 chicken breast (grilled then cut into chunks)
4 slices provolone cheese (more or less depending on the length of your bread)
Pesto (enough to spread so it looks like the picture above) (see below for recipe or buy from the grocer)

Directions:
Slice bread length-wise (see above picture), then layer chicken, then provolone, then tomato slices.  Spread top of bread with pesto.  Put sandwich on tinfoil and place on grill over medium heat until cheese has melted. Wait for sandwich to cool a bit so it's not blazing hot; then slice into sections.  Serve and enjoy.

Pesto Recipe

Home Grown Pesto
Pesto Consistency
Nuts
Ingredients:
Food processor full of basil
3-4 cloves garlic
1/2c olive oil (extra virgin tastes best)
1/2c Parmesan cheese (the kind in the green plastic bottle)
1/4c Nuts (toasted) (pine nuts, almonds, peanuts, assorted, etc..)

Directions:
Place all ingredients into food processor and blend until it's a nice green color.
Serve on warm pasta, bread, or sandwiches. Yummm!
